Bombay Spiced Potatoes

Makes 4 servings
Ingredients:
- 6 red potatoes, cut into chunks
- 4 tbsp extra virgin olive oil
- 1 garlic clove, finely chopped
- 1 tsp ground double mustard
- 1 tsp turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp fennel seeds
- lime juice
- salt and black pepper
Directions:
- boil potatoes in salted boiling water for 5 minutes. Drain.
- fry oil, garlic, and spices into a large frying pan for about 2 minutes.
- Add potatoes to the spicy oil and stir fry over medium heat for about 5 minutes
- Drizzle with lime juice and salt to taste

Next time I'll skip the lime juice and add more salt
