Cherry Tomato-Topped Chicken

Preparation Time: 15 minutes
Cooking Time: 25 minutes
Ingredients:
- 1 tablespoon canola oil
- 2 boneless skinless chicken breasts
- 1/2 red onion, peeled and finely chopped
- 20 cherry tomatoes, halved
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon sugar
- Fresh oregano leaves, to garnish
Directions:
- Preheat oven to 325 F.
- Heat oil in a pan, then add the chicken. Cover and cook over a low heat for 10 minutes. Turn over and cook the other side for 10 minutes
- Remove chicken from pan and place in a dish with 1 tablespoon of water to stop it from drying out. Cover and keep warm in the oven until needed. Meanwhile, increase the heat of the pan and add onion. Saute for 5 minutes and then add the tomatoes.
- Cook the mixture stirring frequently for about 8-10 minutes. Stir the vinegar and sugar into the tomatoes, and heat through for 1-2 minutes.
- Remove the chicken from the oven and serve topped with the tomato mixture.
